Looking to get cameras - need some help

hello
new here...

after a recent break in at our dealership we decided we would like to install our own cameras (currently owner of building has a few however we need to get permission from him everytime we want to take a look at some footage which is a pain in the ass...

we would like to set up our own , just looking for some advice
i am in canada - whats a good place to shop at?

im looking to get Ip camera's because as far as i understand there is no DVR/NVR required - you can run the camera directly with computer (and whatever software installed on computer)

i would like it recording 24-7, with motion sensors that alarm me (lets say a loud beep noise) everytime it senses motion, also would like to to alert my phone past a certain time (lets say 11pm) if it senses motion

cameras will be outside and inside
inside i need

4 camera's to cover shop area
1 to cover entry way
1 to cover office

outside i need multiple cameras to cover surround areas - around 10 cameras

does anyone have any recommendation as far as what i should get and where from ? also am i correct about the NVR/DVR (not needing one)

yeah shopping for cameras is very hard
i always thought more MP is better
but im seeing results from lower MP cams thats amazing
currently i have the 4k 8mp kit from costco
but i want to switch to buying good cameras and connect to PC

just wanted to know exactly what i need
1. good pc
2. poe switch (any specific one?)
3. blue iris software
4. how to pick best cameras for outside and inside
to watch over cars in day and night

Quick start
1) Use Dahua starlight cameras or Hikvision darkfighter cameras or ICPT Night eye cameras (https://store.ipcamtalk.com/) if you need good low light cameras.
2) use a VPN to access home network (openVPN)
3) Do not use wifi cameras.
4) Do not use cloud storage
5) Do Not use uPNP, P2P, QR, do not open ports,
6) More megapixel is not necessarily better.
7) Avoid chinese hacked cameras (most ebay, amazon, aliexpress cameras(not all, but most))
8) Do not use reolink, ring, nest cameras (they are junk)
9) If possible use a turret camera , bullet collect spiders, dome collect dirt and reflect light (IR)
10) Use only solid copper, AWG 23 or 24 ethernet wire. , no CCA (Copper Clad Aluminum)
11) use a test mount to verify the camera mount location. My test rig: rev.2
12) (Looney2ns) If you want to be able to ID faces, don't mount cams higher than 8ft. You want to know who did it, not just what happened.
